ABOUT Jamie Oliver's Baked Fruit Recipe RECIPE

This recipe has been taken from Chef Jamie Oliver's book , 'The Naked Chef', under the section Desserts. As rightly said by the author himself, 'Don’t underestimate the simplicity of fresh, ripe fruits like bananas, apples, pears that are available in season. When these ripe fruits are used in baking , they take on quite a different character. The warm, tart flavors of the fruit with the sweet vanilla sugar are really interesting and taste quite different from the fruits, when eaten raw.' In this recipe, you can take any fruits you like. I have used pears and bananas for this recipe. The best thing about this recipe is there is no hard and fast rules for the exact ingredients measurements.

Ingredients Serving: 2

  1. 2 large ripe bananas
  2. 2 tender pears
  3. For vanilla sugar :
  4. 250 gms/ .5lb caster sugar
  5. 1 vanilla pod

Instructions

  1. Process the vanilla pod in the mixer,blitz,scrape the sides and blitz again. Add all the suagr and blitz for about 2 minutes.
  2. Sieve the mixture into a bowl, return any lumps to the food processor and blitz again. Repeat this process until you get fine ashly-coloured mixture. The vanilla sugar is ready.
  3. Wash the fruits, and halve, deseed or core if necessary. Peel and slice the bananas. Remember you many use any fruits you like.
  4. Place the fruits in a shallow heatproof earthenware-type serving dish and sprinkle them with vanilla sugar. You may also drizzle a little brandy too.
  5. The amount of vanilla sugar to be added depends on the type of fruit. Add more sugar if the fruit is very sour and tart or use less sugar if the fruit is already sweet. Adjust as per your sweet preference.
  6. Now, grill the fruits or roast them in the oven at 425 degrees F until the fruits turn soft but yet keep their shape. The cooking time depends on the type of fruits. It took 15 minutes for me to bake the fruits. So adjust accordingly.
  7. Serve the Baked Fruits with some whipped cream, creme fraiche, ice-cream or mascarpone sweetened with vanilla sugar.
