Ingredients to make Chocolate excess

  • 2 large eggs
  • 1 1/4 cup powdered sugar
  • 1 cup ordinary sugar
  • 1 cup curd
  • 1/2 cup cocoa powder
  • 1 tsp vanilla extract
  • 2 cups(200gm) all purpose flour
  • 1 tsp Baking powder
  • 1/4 (90 gm) oil
  • To soak
  • 1/2 cup Milk
  • 1 tbsp sugar
  • For Filling
  • 150gm cream
  • 3 tbsp Powdered sugar
  • 3-4 tbsp cocoa powdered
  • 1/2 tsp Vanilla extract
  • For topping
  • 50gm fresh cream
  • 2 slabs of dark chocolate(amul or nestle)

How to make Chocolate excess

  1. Grease the cake tin with oil and cover the outer layer with news paper
  2. Beat eggs and sugar till it is double in it's volume
  3. Next in a separate bowl add curd sugar and mix well. To this add cocoa powder,flour, baking powder and mix well. Slowly fold in eggs without any lumps.
  4. Transfer this to cake tin and cook till a toothpick inserted comes out clean.
  5. Let it cool completely and then divide into 3 equal parts
  6. In a small sauce pan add milk sugar and essence and stir till the sugar is melted and brush this syrup on the cake
  7. Now in a vessel add cream powdered sugar cocoa powder and beat till stiff peaks
  8. Next for panache add cream in a vessel and heat it till it starts to boil at this point add in chocolate and butter and mix well.
  9. Now with the help of a palate knife spread the chocolate cream filling over the cake by over laping each layer one over the other.
  10. Let this rest in fridge some time and then poor over the ganache and then make design with fork
