Banana Stem Salad

Ingredients to make Banana Stem Salad

  • Banana stem finely chopped - 1 1/2 cup
  • Banana stem finely chopped - 1 1/2 cup
  • Thick coconut milk from 1/2 of a medium sized coconut
  • Tamarind - size of a small pebble
  • Ripe red green chilies- 8- 10(according to your spice tolera
  • Curd according to the sourness level
  • For tadka/phann/seasoning:
  • Oil - 1 -2 tbsp
  • Mustard seeds - 1tbsp
  • Handful of curry leaves

How to make Banana Stem Salad

  1. Finely chop the stem ,sprinkle salt ,mix well and let it marinate for 10 minutes. Keep it aside. Chop the green chilies,extract coconut milk .
  2. Take 2 spoons of coconut milk add tamarind into it rub it well, make tamarind water. Mix water and tamarind to get tamarind water. Keep it aside.
  3. Take a mixing bowl, squeeze water out of the finely chopped banana stem and place it in the bowl. Add the tamarind water,chopped ripe chilies and coconut milk. Mix them up
  4. Now pour in the curd. Add little curd at a time and do a taste test and check for sourness.If needed sprinkle little salt too.
  5. The curry should have sourness{of curd} ,spiciness {of chilies} and little creamy taste too {of coconut milk}.So adjust the ingredients accordingly.
  6. Now let us prepare the tadka. Heat oil in the pan,once it is hot add in the mustard seeds,allow them to pop up and then add in handful of curry leaves and switch off the flame.
  7. Mix well and pour the seasoning into the above made curry.Mix well.
  8. Our banana stem salad is ready to be served.It can be served as a side dish for rice.

My Tip:

Use ripe green chillies and fresh coconut milk and sour curd for best outcome.
