Ingredients Serving: 4

  1. King Oyster, 4 large, cut into 8 round slices each
  2. Vegan Butter, 2 tablespoons
  3. Extra virgin olive oil, 2 tablespoons
  4. Dry white wine, half cup
  5. Linguini or spaghetti
  6. Juice and zest of one lemon
  7. 1 green onion, thinly sliced, white and greens only
  8. 3 cloves garlic, minced (optional)
  9. Small bundle chives, thinly sliced
  10. Black pepper, freshly ground
  11. Seaweed powder or dried whole seaweed (optional)

Instructions

  1. Boil water with small amount of dried seaweed or salt in a large pot. If using seaweed, remove from water once boiling.
  2. Heat a large pan over medium high heat. Once warmed evenly, add vegan butter and reduce heat to medium.
  3. Once water boils, add pasta. Cook one minute shorter than package directions.
  4. After adding pasta to pot, add mushrooms in a single layer to pan with green onion. If you do not have a large enough pan to hold all the mushrooms at once, they can be cooked in butter in batches and reserved for the next step.
  5. Cook mushrooms and onions uncovered until liquid from butter and mushrooms is almost evaporated. Flip all mushrooms. Add olive oil and garlic, shake pan to coat, cook for 30 seconds.
  6. Add white wine and cover pan. Cook until pasta is finished.
  7. Once pasta is finished, drain (do not rinse). Uncover mushroom pan and immediately add lemon juice and seaweed powder, stir. Add pasta, toss to coat. Top each portion with black pepper, chives, and lemon zest to taste.
