ABOUT Chicken Balti Masala RECIPE

This is quite a spicy dish. I'm a huge fan of Chef /Author Raghavan Iyer and this recipe is adapted from his book 660 Curries

Ingredients Serving: 6

  1. 1 whole chicken cut in pieces
  2. 1" cinnamon stick
  3. 1 black cardamom
  4. 3 green cardamoms
  5. 3 cloves
  6. 2 Bay Leaves
  7. 2 tbsp Ginger-garlic paste
  8. 3 tsp + 1 tsp Kashmiri red chili powder
  9. 2 tsp balti garam masala
  10. 1 tsp meat masala
  11. 4 tbsp thick yogurt
  12. Salt to taste
  13. 4 tbsp oil
  14. 1 tsp kasoori methi powder
  15. Balti Garam Masala:-
  16. 2 tsp coriander seeds
  17. 2 fennel seeds
  18. 1 Tsp cumin seed
  19. 1 tsp black mustard seeds
  20. 1/2 tsp cloves
  21. 1/2 tsp nigella seeds (kalonji)
  22. 3 bay leave
  23. 2 cinnamon sticks broken
  24. 2 tsp red chili flakes
  25. 1/2 tsp ground nutmeg

Instructions

  1. Dry roast whole spices mentioned under Balti garam masala except chili flakes and nutmeg till aromatic. Add chili flakes and nutmeg for final roasting time. Grind to fine powder.
  2. Clean, wash and drain chicken.
  3. Marinate chicken with all ingredients except whole spices and oil for an hour or more.
  4. Heat oil in wok. Add whole spices and 1 tsp red chili powder. Sauté few seconds and immediately add chicken.
  5. Stir chicken in oil well and cover with lid. Cook chicken till its tender.
  6. Remove lid and let all the water evaporate so only thick masala is left behind.
  7. Finally add kasoori methi powder and give it a stir.
  8. Remove to a serving dish and serve with naan/paratha/steamed rice.
