ABOUT jhatpat veg pulao RECIPE

An easy and quick vegetable pulao to be made at home, which also can be served with just some raita on the side.

Ingredients Serving: 4

  1. 1 cup soaked basmati rice
  2. onion [chopped] - 1
  3. bean - 1/4 th cup [chopped]
  4. carrots [chopped] - 1/4 th cup
  5. green peas - 1/4 th cup
  6. cumin seeds - 1 tsp
  7. bay leaf - 1
  8. ginger garlic paste - 1/2 tsp
  9. garam masala powder - 1/4 th tsp
  10. salt
  11. cardamom, cloves, cinnamon - 2 of each
  12. Ghee/refined oil

Instructions

  1. Heat a pressure cooker saucepan with some ghee/refined oil. Add the bay leaf, cumin seeds, cardamoms, cloves and cinnamon. once they smell, add the chopped onion and saute till they are translucent.
  2. Now add the ginger garlic paste, saute for few minutes till the raw smell goes away. Then add all the chopped vegetables, garam masala powder and some salt. cook for few minutes till the veggies are almost soft.
  3. Now add the basmati rice, give it a stir. Then add 1.5 cups of water and mix. close the lid and cook till 2 whistles are released from the cooker. let the pressure come down, open the lid, fluff up the cooked pulao with a fork, and serve.
