Ingredients to make Caramel custard

  • 3 Large eggs
  • 250ml milk
  • 6 tbsp sugar
  • 1 tsp vanilla essence

How to make Caramel custard

  1. Take 2 tbsp of sugar and add 1 tbsp of water in a bowl and place it in life flame. Keep stirring the mixture until the sugar caramelizes. Put off the flame and quickly pour about 1 tsp of it in 6 moulds. Allow it to cool for about 5 mins.
  2. Best eggs, milk, vannila essence and remaining sugar with the help of fork or a whisker.
  3. Sieve this mixture to remove any egg fragments.
  4. Pour the mixture in moulds containing caramelized sugar.
  5. Place moulds in a bowl and keep the bowl in a pressure cooker filled with sufficient water at the bottom of the cooker to last for an hour. Remove cooker whistle and cook in low flame for 1 hour 15 mins.
  6. U can check if the custard is ready by inserting a knife in it. If the knife comes out clean, its ready to go for setting.
  7. Let it cool for a while and the transfer it to refrigerator to set.
  8. To serve, invert the moulds on a plate and serve chilled.

My Tip:

Do not forget to sieve the mixture, as this process gives u a very soft and smooth custard. Can be done in a microwave, but slow cooking in a pressure cooker gives the best results.
