Ingredients to make Zucchini Orange Cake

  • 1 cup grated Zucchini(squeezed to remove extra water)
  • 1/2 cup sugar
  • 1 tsp orange zest
  • 2 tbsp fresh orange juice
  • 1tsp Baking powder
  • 1/4 tsp baking soda
  • 1 cup flour
  • 2 eggs
  • 1/2 tsp butter for greasing bundt pan
  • For Icing :
  • 1/4 cup icing sugar
  • 3 tbsp fresh orange juice
  • mint leaves to garnish

How to make Zucchini Orange Cake

  1. Preheat oven to 180C.
  2. In a bowl sieve flour , baking powder and baking soda twice.
  3. In another bowl whisk eggs until fluffy ,followed by sugar ,orange zest and grated zucchini.
  4. Add dry ingredients and followed by orange juice and mix .
  5. Grease Bundt pan and pour the batter in it .
  6. Bake for 25-30 mins or until skewer comes clean.
  7. Once baked allow it to cool on wire rack
  8. Whisk the icing ingredients together and pour on top of cooled cake.garnish with mint leaves.
