ABOUT Chicken Salad Sandwich RECIPE

Kids enjoy sandwiches especially when they are short on time or don't want to deal with messy fingers as far as lunchbox food is concerned. This is a simple mayonnaise sandwich where I have included min sweet peppers to give the essential need for nutrients. Peppers are scientifically proven to be anti-cancerous and I love these juicy crunchy mini sweet peppers.

Ingredients Serving: 6

  1. 2 cups cooked shredded chicken
  2. 1 cup fat-free mayonnaise
  3. 1/2 cup roasted peppers salad dressing
  4. 1 tsp dried dill leaves
  5. 1 tsp garlic powder
  6. 1 tsp tobasco sauce
  7. 1 small iceberg lettuce shredded
  8. 6 mini sweet peppers diced finely
  9. 1 small green bell pepper diced finely
  10. 1 small bunch spring onions diced finely (discard dark green stalk)
  11. 1/2 tsp black pepper powder
  12. 1 loaf white sandwich bread/Italian bread

Instructions

  1. Combine all the vegetables and chicken in a large bowl.
  2. Whisk mayonnaise, salad dressing, tobasco, black pepper powder, dried dill, and garlic powder together in another bowl.
  3. Mix mayonnaise with chicken. Chill in refrigerator for 15 minutes.
  4. Spread a generous helping of the prepared chicken salad on the bread slice. Cover with other slice.
