Ingredients to make Biscuit Islands in Apple Sea

  • For the apple Sea :
  • 2 ripe apples
  • 2 cups Milk
  • 2 Tbsp cornflour
  • 4 tbsp sugar
  • 1 tsp vanilla/butterscotch essence (optional)
  • For the Biscuit Islands :
  • 4 Glucose/Marie/Digestive biscuits
  • 1 tbsp butter

How to make Biscuit Islands in Apple Sea

  1. Prepare the Islands : Powder the biscuits in a coffee or dry grinder and take out on a plate. Mix the melted butter and form into balls. They roll easily. Refrigerate till serving time.
  2. For the Apple Sea : Peel and core one Apple and blend into a puree with 3 tbsp milk. Mix 1/4 cup cold milk with the cornflour and keep aside. Heat the remaining milk and bring to a boil.
  3. Add the cornflour slurry and stir till thick. Add sugar and keep aside to cool to room temperature. Mix in the puree and essence (if using).
  4. To serve : Core and slice the other Apple. Take a small but deep plate and arrange Apple slices on the sides. Pour 1/4 cup of the Apple Sea and place 2 - 3 Biscuit Islands in the middle. Serve immediately.
