ABOUT Jamie Oliver's Pasta Peperonata RECIPE

Having won Jamie's Dinner on BetterButter, I was keen to try a few of his veg recipes. Here's one that really blew me away.

Ingredients Serving: 4

  1. 2 red peppers, deseeded and sliced
  2. 2 yellow peppers, deseeded and sliced
  3. Extra virgin olive oil
  4. Salt to taste
  5. Freshly ground pepper, To taste
  6. 2 red onions, peeled and finely sliced
  7. 2 cloves of garlic, peeled and grated
  8. 2 handfuls of fresh parsley (I used Green coriander leaves )
  9. 2 tablespoon balsamic vinegar
  10. 2 handfuls of grated parmesan cheese
  11. 2 heaped tablespoon mascarpone cheese
  12. 455 gm rigatoni/ penne / spaghetti

Instructions

  1. Boil the pasta in salted water till done.
  2. Mine took 3 whistles in the pressure cooker on full flame.
  3. Strain and keep aside.
  4. Reserve about 3-4 tablespoon of the pasta water.
  5. In a non stick pan, add 1-2 tablespooon oil and heat on low flame for a minute.
  6. Toss in the red and yellow peppers.
  7. Put on a lid and let cook for 15 minutes.
  8. Stir gently once or twice.
  9. Add the sliced onion and let it cook for about 20 minutes.
  10. Give one or two stirs in between.
  11. Add the garlic and chopped coriander leaves.
  12. Add in the vinegar and mix it up for a couple of minutes.
  13. Put in the two cheeses and let it simmer on low flame for about 5 minutes.
  14. Add in the salt and freshly ground black pepper.
  15. Adjust seasoning as per personal preference.
  16. Lastly, add the pasta and about 2-3 tablespoon of pasta water.
  17. Toss it well so that everything comes together.
  18. Garnish with grated cheese and fresh coriander leaves.
  19. Serve hot.
