Pesto Spaghetti

Ingredients to make Pesto Spaghetti

  • coriander Leaves - 1/2 Cup
  • mint leaves - 1/2 Cup
  • Basil Leaves - 1 Cup
  • Parmesan cheese depending upon choice
  • olive oil - 1/2 cup
  • walnuts - 1/4 cup roughly chopped
  • green chillies - 1/2
  • salt To Taste
  • Freshly ground black pepper
  • Milk put Gradually as per consistency needed
  • Boiled Spaghetti - 1 pack
  • Cherry tomatoes Halved - Handful
  • Red - Yellow Bell peppers - Handful
  • garlic Paste - 1 to 2 tbsp
  • Oregano - 2 tsp

How to make Pesto Spaghetti

  1. Coarsely grind the coriander, basil leaves, garlic, mint leaves and green chili with Olive oil and make a thick consistency paste. Don't add water or else it will be too runny.
  2. Remove the ready paste in a bowl, add the seasoning, oregano, parmesan cheese and roughly chopped walnuts. Add remaining olive oil to get a good glaze.
  3. Boil the spaghetti till al dente. Half the cherry tomatoes. Chop the bell peppers.
  4. Now, take oil in a pan, add the remaining garlic, add the pesto, the chopped vegetable, walnuts as per requirement, and mix it well together. Add milk to get to semi liquid consistency. Adjust the seasoning. Don't overcook.
  5. The pasta is ready to be served with a French baguette or a loaf.

My Tip:

The pesto is made with pine nuts, but I made it with walnuts. It taste's awesome. Do try.
