ABOUT Berrilicious Pudding - Dawn on a Platter! RECIPE

Presenting my Berrilicious Pudding prepared using home made spongy carrot cake, fresh strawberry compote, fresh blueberry compote and Mascarpone cheese. This recipe is beautiful adaptation of Chef Shipra Khanna recipe 'Noor - E - Parda' from the famous book 'MasterChef India' authored by Chef Vikas Khanna. Hope you all like it! :)

Ingredients Serving: 4

  1. For the Carrot Cake:
  2. 100 gms APF (Maida)
  3. 50 gms wheat flour
  4. 2 tsp baking powder
  5. 100 gms castor sugar
  6. 2 Eggs
  7. 100 gms Butter
  8. 2 tsp garam masala
  9. 1 tsp Cinnamon powder
  10. 1 cup freshly grated Carrots
  11. 1/2 cup coconut powder
  12. For blueberries compote:
  13. 10 blueberries
  14. 1 tbsp sugar
  15. 1 tsp water
  16. For strawberries compote:
  17. 10 big strawberries
  18. 2 tbsp Sugar
  19. 2 tsp Lemon juice
  20. For Mascarpone cheese:
  21. 4 tbsp Mascarpone cheese
  22. 1 tbsp icing sugar

Instructions

  1. For Carrot cake-Sieve flours + spices + baking powder together. Whip butter and castor sugar till smooth. Add eggs one at a time and whip well.
  2. Add grated carrots and coconut powder. Mix well the dry and wet ingredients.Bake in a pre-heated over for 30 mins at 160 degrees. Keep an eye from 25 mins onward to avoid over baking. Do not forget to cover the top of the cake with foil after 15 mins.
  3. Your spiced carrot cake is ready. Cool it!
  4. For Blueberries compote-Heat pan and put finely chopped blueberries. Add sugar and keep the flames on sim.
  5. Let it simmer for good 10 mins. Add lemon juice. Blueberry compote is ready. Cool it!
  6. For Strawberry compote-Heat pan and put finely chopped strawberries. Add sugar and keep the flames on sim.
  7. Let it simmer for good 10 mins. Add lemon juice. Strawberry compote is ready. Cool it
  8. For Mascarpone Cheese Piping-Mix Mascarpone cheese with icing sugar. Put in piping bag and keep it refrigerated.
  9. Now, to serve:Slice the carrot cake in two halves. Take 3 round slices of it using circular ring. Put one slice on the platter.
  10. Cover it with a layer of Mascarpone cheese. Put a layer of Blueberry compote. Swirl it with the help of tooth pic. Put second slice over it.
  11. Repeat previous steps with strawberry compote. Put the final slice over it. Decorate with piped Mascarpone cheese and compotes
  12. Garnish with caramel nets and fresh mint leaves.Your Berrilicious Pudding is ready!
