ABOUT Scrambled Eggs with a Twist RECIPE

This is a one pot meal which has freshly made rotis sautéed and added along with vegetables and eggs which can be given for breakfast, brunch or lunch and is loved by both children and adults! Add more butter while making this for children and serve with Tomato Ketchup or Green Chutney!

Ingredients Serving: 4

  1. 2 medium sized freshly made rotis
  2. 4 eggs beaten
  3. 1/4 cup Milk
  4. 2 tsp salt
  5. 2 tsp pepper
  6. 1 small onion - finely chopped
  7. 1 green chilli - finely minced
  8. 1 slice Green Capsicum - finely chopped
  9. 1 tomato - finely chopped
  10. 1 Green Onion/leeks/spring onion - whites and greens chopped separately
  11. 2 cubes cheese - grated
  12. 2 tbsp butter (lessen the amount if needed when making for adults)

Instructions

  1. Add the milk to the eggs with 1 tsp each of the salt and pepper and beat well till blended. Keep aside.
  2. Roll each roti and using a pair of kitchen scissors snip each into thin ribbons. Heat 1 tbsp butter and sauté the ribbons till crisp. Keep aside.
  3. Heat the remaining butter and add the chopped onion and the white of the spring onion. Fry till translucent and add the capsicum. Fry for 2 minutes and add tomatoes. Sprinkle the remaining 1 tsp salt and pepper and stir fry for 2 - 3 minutes.
  4. Add the fried roti ribbons leaving 1 tbsp for garnishing and mix well and then pour on the beaten eggs and milk. Add 1 tbsp of the spring onion greens.
  5. Let it cook for 2 - 3 minutes and then start stirring the eggs so that they separate into shreds and cook uniformly .Cook the eggs till they set. Taste for salt and pepper and adjust the seasoning.
  6. Divide the eggs between 4 serving plates and sprinkle the remaining spring onion greens and roti ribbons on top. Serve immediately.
