I've discovered that a big Breakfast is the key to a successful day.

SCRAMBLED EGG MUFFINS

Ingredients to make SCRAMBLED EGG MUFFINS

  • 3 egg whites
  • 2 tbsp shredded chicken
  • 1 tbsp chopped onion
  • 1 tsp chopped green chili
  • 1/2 cup coriander leaves
  • 1tbsp chopped tomato
  • 1/2 tsp chopped garlic
  • 1/2 tsp black pepper
  • 1tbsp cheddar cheese
  • 1tbsp chopped spinach leaves
  • 1/2 tsp cooking oil or cooking spray
  • 2 tbsp milk
  • no salt and sugar

How to make SCRAMBLED EGG MUFFINS

  1. Preheat oven to 350 fahrenheit.
  2. In a large bowl beat the white eggs add milk, onion, cilantro, garlic, tomato, cheese, pepper, green chili, coriander leaves, spinach and chicken (optional)
  3. Spoon 1/3 cupfuls into muffin cups or small bowl coated with cooking spray.
  4. Bake 20-30mins or until a knife inserted near the center comes out clean
  5. Serve with any fruit juice.
