Stuffed Zucchinin Boats

Ingredients to make Stuffed Zucchinin Boats

  • 2 Zucchinis
  • 1/2 chopped onion
  • 1tsp chopped garlic and ginger
  • 1 tbsp soy-sauce
  • 1 cup chopped boiled chicken
  • 1/2 a chopped tomato
  • Salt
  • Sugar
  • Oil spray
  • Black pepper
  • 1 tbsp chedder cheese

How to make Stuffed Zucchinin Boats

  1. Preheat oven.
  2. Cut zucchini in half lengthwise and using a spoon scoop all the flesh out, leaving 1/4 thick.
  3. Boil Zucchini halves in microwave for 8 minutes,then remove from water.
  4. Heat oil in a pan, add chopped ginger garlic and chopped onion. Saute it for 3 minutes.
  5. Then add chopped tomato and add soy sauce with black pepper then add chopped zucchini seasoned with salt & sugar.
  6. Time to add chopped boiled chicken and saute it for 6-8 mintues
  7. Using a spoon fill each hollowed zucchini with the chicken mixture ,pressing firmly.
  8. Sprinkle the boat with cheddar cheese
  9. Cover with foil and bake it for 35-40 minutes until cheese has melted and zucchini is cooked through.
