Ingredients to make MADEIRA CAKE

  • 2 cups all purpose flour
  • 1 ¾ cup butter, softened
  • 1 cup sugar, powdered
  • 3 eggs
  • 1/3 cup mixed peel
  • ¼ cup slivered almonds
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 2 teaspoons finely grated lemon rind

How to make MADEIRA CAKE

  1. Preheat oven to 160 degrees C. Grease and line one 20cm round cake tin.
  2. Sift flour, baking powder and salt.
  3. Beat butter and sugar until light and fluffy.
  4. Beat in eggs one by one till the mixture turns pale. Add grated lemon rind.
  5. Stir in sifted flour.
  6. Spoon the batter into the pan. Level the top.
  7. Bake for 20 minutes.
  8. Remove cake from oven; sprinkle mixed peels and almond slivers evenly. Return to oven.
  9. Bake for 40 minutes or till a skewer inserted in the centre comes out clean.
  10. Remove from the pan after 5 minutes, slice when cold.

My Tip:

Add peels generously for greater flavour. Use both lemon and orange peels.
