Ingredients to make Bhuni Khichdi (A spacial Khichdi, mostly popular in Bengal)

  • Flavored rice (Basmati, Gobinda Bhog etc.): - 2 cups
  • Yellow moong dal (split yellow gram):- 11/2 cups
  • cauliflower (Sliced):- 1 cup
  • carrot (chopped):- 1
  • Beans (chopped):- 5-6 pieces
  • peas:- 1/2Cup
  • ginger paste:- ½ teaspoon
  • cashew nut:- 10-12
  • raisins:- 15-16
  • bay leaf:- 2
  • cloves:- 2
  • Green cardamom:- 2
  • cinnamon: 2
  • turmeric powder:- 1 teaspoon
  • Refined oil:- 1/2Cup
  • ghee:- 2 tablespoon
  • sugar:- 2 teaspoon
  • salt:- to taste

How to make Bhuni Khichdi (A spacial Khichdi, mostly popular in Bengal)

  1. Wash and soak the rice.
  2. Toast the moong dal, wash and keep aside.
  3. Heat the oil in a deep pan and when hot, add the bay leaf and garam mashala and fry on a medium flame for a few seconds.
  4. Add cauliflower, carrot, beans, ginger paste, turmeric powder and salt. Mix well and fry on a medium flame for 1 to 2 minutes.
  5. Add the drained rice, moong dal and mix well. Cook for 3 minutes.
  6. Now, add 3 cups of water, cover the pan and cook in low flame.
  7. Off the flame when the rice and dal well cooked. Add the Ghee and mix well. Cover it for 5 minutes, and then serve.

My Tip:

You can add spirkle beresta or fried onion on the khichdi before serve.
