Ingredients to make Pasta shells with garlic, coriander, mint butter

  • Shell type pasta/macaroni- 150gram
  • Soft unsalted butter-50gram
  • Finely chopped coriander and mint leaves-1 cup
  • garlic -4 to 5 big cloves- finely chopped or grated
  • salt - to cook the pasta plus a pinch for sauce
  • water - to cook the pasta

How to make Pasta shells with garlic, coriander, mint butter

  1. Cook the pasta in half litre of boiling water with salt for seven minutes or till aldente, that is well cooked but still with a bite.
  2. Drain the pasta,but reserve some of the pasta cooked water. Wash the pasta immediately with running cold water and set aside.
  3. In a saucepan, melt butter in low heat.
  4. Add the garlic with a pinch of salt and saute for a minute,taking care not to burn the garlic.
  5. Add the chopped coriander and mint leaves and saute for another minute.
  6. Add the cooked pasta, mix well and add a tablespoon of the pasta cooked water and mix well.
  7. Add another tablespoon of the pasta cooked water and mix well so as the sauce coats the pasta well.
  8. Switch off and serve hot!

My Tip:

1. I used shell type pasta, the original recipe used pasta snails type macaroni, lumache rigate,but this type also worked well 2. Check the cooking of pasta right from 5 to 7 minutes. It needs to be cooked but still with a bite. 3. Nigella had used sea salt flakes for the sauce, if available you can use that.
