Light and Fresh Potato salad

Ingredients to make Light and Fresh Potato salad

  • 250 grams New potatoes ,unpeeled,chopped into bite size pieces
  • 100 grams a bunch of raddish (red)
  • 2-3 spring onions thinly sliced
  • 2 tblspn olive oil
  • 2tblspn wholegrain mustard
  • Salt and freshly ground Black pepper
  • A punnet of Cress (optional)

How to make Light and Fresh Potato salad

  1. Cook potatoes in salted boiling water for 15 minutes until just tender but not breaking apart.
  2. While the potatoes are cooking whisk together the Oil,mustard, lemon juice and the seasoning.
  3. Drain the potatoes and leave to steam dry for 5minutes and put them back in the Pan
  4. Pour the dressing over and add the Raddishes and spring onions .Fold together trying not to break up the potatoes
  5. Tip into a serving dish and serve on side
  6. Scatter cress if preferred

My Tip:

Prepare potato salad upto a couple or hours before but do not add cress Transfer to serving dish and cover with cling film and chill Complete the recipe to serve
