Ingredients Serving: 6

  1. 9 tsbp softened unsalted butter plus more for greasing
  2. 1 1/2 cups All Purpose Flour
  3. 3 TBSP cornstarch
  4. 1 tsp baking soda
  5. 1/8 th tsp Salt
  6. 1 1/2 cups plus 2 tbsp granulated sugar
  7. 3 whole large eggs
  8. 1/2 cup sour cream
  9. 1 tsp vanilla extract
  10. 1 pound (500gm) strawberries plus more to garnish
  11. ICING :-
  12. 1 1/2 cups powdered sugar
  13. 8 ounces(230gm) cream cheese softened
  14. 2 sticks unsalted butter
  15. Vanilla extract 1 tsp
  16. A dash of salt

Instructions

  1. For the cake , preheat the oven at 350° F (180°c). Grease the pan and set aside .
  2. Sift together the flour , cornstarch , baking soda and salt .
  3. Cream the butter and the 1 1/2 cups sugar with the help of a hand blender till light and fluffy . Add the eggs one at a time , ensuring each addition to be well mixed in.
  4. Add the sour cream and the vanilla and mix until combined .
  5. Add the dry ingredients and mix till no lumps are seen .
  6. Bake the cake for about 45 - 50 mins . Remove the cake immediately and place on a cooling rack and allow to cool completely .
  7. Stem and halve the strawberries and mash them . Sprinkle the remaining 2 tbsp sugar over them and allow to sit for 30 mins.
  8. For the icing , combine the powdered sugar , cream cheese , vanilla , butter and dadh of salt in a bowl . Mix until very fluffy .
  9. Slice the cakes in half to make two smaller cakes . Spread the strawberries evenly over each cut sides of the cake halves , pouring on the juices as well .
  10. Place the cakes in the freezer just for 5 mins , just to make icing easier .
  11. Remove the cake halves . Use a little less than one third of the icing and to spread on top of the strawberries in the bottom layer .
  12. Add half of the remaining icing on the top , spreading evenly .
  13. Leave plain or garnish with strawberry halves .
