ABOUT Panforte RECIPE

This heavenly delicious Italian fruit and nut compacted dark nougat patty, from the beautiful book Nigella Christmas by Nigella Lawson, is not exactly a cake but can surely leave you crave for more after you bite it once.

Ingredients Serving: 10

  1. 125 grams almonds with skin
  2. 100 grams blanched almonds
  3. 125 grams whole shelled hazelnuts
  4. 75 grams soft dried figs, roughly sliced into 1-2 cm pieces
  5. 200 grams chocolate covered candied orange and lemon peel, roughly chopped
  6. 1/2 teaspoon ground cloves
  7. 1/2 teaspoon ground cinnamon
  8. Good grating of fresh nutmeg
  9. 50 grams plain flour (all purpose flour)
  10. 1/4 teaspoon white pepper
  11. 1 tablespoon cocoa powder
  12. 150 grams sugar
  13. 150 grams honey
  14. 30 grams butter
  15. 1 tablespoon icing sugar or cocoa powder for final touch

Instructions

  1. Preheat the oven to 170 degrees and line the loaf tin (20 CMs) with parchment paper.
  2. Mix together nuts, dried fruits, chocolate covered candied peels in a heatproof bowl.
  3. Add cloves, cinnamon, nutmeg, flour, white pepper and cocoa powder.
  4. Put the sugar, honey and butter into a saucepan and melt together gently.
  5. Take off the heat and pour into the dry ingredients in the heatproof bowl.
  6. Stir slowly and patiently to mix everything together well.
  7. Tip into sandwich tin and, using wet hands, pat and press down the top to get as smooth a surface as you possibly can.
  8. Bake in the oven for 40 minutes; the top of the cake will be bubbling when it's ready.
  9. Let the cake cool completely in the tin, then remove all the lining and push the icing sugar or cocoa powder thickly through a small sieve over the top of the cake.
