ABOUT Egg Shoap RECIPE

Egg Shoap is a famous Assamese Appetizer. Deep fried cutlets made with boiled eggs and potatoes flavored with Indian spices is a great tea time snack option and even makes an amazing party snack or tiffin recipe. Adapted from &Assamese Cuisines& by Gita Goswami

Ingredients Serving: 4

  1. Boiled and peeled eggs 4
  2. Boiled and peeled potatoes 4
  3. Finely chopped onion 1
  4. Finely chopped green chilies 2
  5. Turmeric powder 1/2 tsp
  6. Cumin powder 1 tsp
  7. salt as needed
  8. Beaten Eggs 2
  9. Bread crumbs 2 cups
  10. Oil for Deep frying

Instructions

  1. Mash potatoes and eggs together in a bowl.
  2. Heat 1 tbsp oil in a pan and saute onion and green chilies till golden
  3. Season with salt, turmeric and cumin powder and saute for another 2 mins.
  4. Add the fried onions with potato and egg mix.
  5. Mix well to incorporate the flavors.
  6. Heat oil for deep frying.
  7. Meanwhile shape the potato and egg mix into round or oval cutlets.
  8. Dip in beaten eggs and roll over bread crumbs.
  9. Deep fry till golden and serve hot with tea or coffee.
