This yummy Black Forest cake is adapted from book "Just Desserts" by Mariah Symons.
Looks absolutely perfect...
For Chocolate sponge :
Sieve flour and cocoa powder together , so that there are no lumps
Beat egg whites until they reach soft peaks,then add baking powder and essence and beat til stiff peaks.
Add egg yolks one at a time and continue beating .
Add sugar and continue to beat until light and foamy.
Add flour -cocoa mixture to this and carefully mix with cut and fold method.
Pour the mixture in cake tin and bake in preheated oven at 180 C for 20-25 mins
Once done allow it to cool on wire rack.
For filling and topping:
Whip chilled heavy cream to stiff peaks.
Chop half of the cherries to bite size pieces for filling in cake.
Keep cherry syrup from can for brushing the cake sponge.
Assembly :
Split the cake in three equal layers.Put bottom layer on cake board.
Brush cherry syrup on the cake layer and apply generous amount of cream, then spread half of the chopped cherries over the cream.
Put second layer of cake on top and again brush with cherry syrup,spread cream and top with remaining chopped cherries.
Place the last layer on the top then brush with cherry syrup and then crumb coat the cake with thin layer of cream
Refrigerate in for 20 mins.
Apply second layer of cream on cake and then with help of piping bag pipe some small rosette on sides of cake and place whole cherry on each.
Sprinkle grated chocolate on sides and middle of the cake.
