Sweet Potato Rosti with Garlic Butter Greens !! Recipe adapted from Food & Travel magazine,The Medicinal Chef - Dale Pinnock. ( Original recipe t he used Eggs for binding of ingredients.Here I have used a combination of Corn flour and plain flour as substitute for Eggs. And recipe just turn out so amazingly good that my friends who eats Eggs preferred it over the original version made with eggs.As this version allows to enjoy the unique taste and texture of sweet potato instead of strong dominating flavours of Eggs.It's also a quick to put together recipe which has high nutritional value. The bonus point to note is- Its approved & Loved by kids and even the prickiest eaters :)) Hope you will Enjoy it too.Let's get started!!

Ingredients Serving: 2

  1. 2 medium sweet potatoes, scrubbed clean & grated.
  2. 2 spring onions,chopped into matchsticks.
  3. 2 tbsp wholemeal flour/ plain flour /gluten free flours works fine too.
  4. 2 tbsp corn flour/corn starch
  5. Water to mix.
  6. Salt to taste
  7. 1/2 tbsp chilli flakes
  8. A wide Bowl & Spatula to mix the ingredients.
  9. 2-3 tbsp of olive oil
  10. A flat frying pan. I used Cast iron one here.
  11. A large handful of greens like half kale/spinach and half spring onions .
  12. 2-3 tsp garlic butter

Instructions

  1. Place the grated sweet potato, spring onion and both flours into a bowl and mix well.
  2. Add salt to taste, chili flakes and water to make a thick batter with consistency to form a patty /rosti on hands using a little of water or oil .
  3. Heat 2-3 tbsp of olive oil in a frying pan until hot, then add the Rosti in the centre of the pan in a round patty shape, making sure the ingredients are pressed down well and tightly compressed.
  4. Fry for 3-4 minutes on each side or until turns golden and crispy.
  5. Meanwhile, melt the Garlic butter in a pan, add the greens and saute until softened. Then serve on top of the rosti.
  6. Fried Garlic used to make butter can be used for garnishing .
