Andhra chicken lollipop is a spicy and tangy chicken delicacy which can be served as an appetizer or side dish. This recipe is taken from The Chak le India cookbook by Aditya Bal.

Ingredients Serving: 4

  2. 10 CHICKEN LOLLIPOPS
  3. 1 tsp oil
  4. For the marinade:
  5. ½ tsp turmeric powder
  6. ½ tsp red chilli powder
  7. ½ tsp salt
  8. 1 tsp refined oil
  9. For the Andhra masala paste
  10. 3 tsp refined oil
  11. 6 dried red Guntur chillies
  12. 6 dried red chillies
  13. 3/4” ginger
  14. 6 to 8 garlic cloves
  15. 4 green chillies
  16. 1 tsp cumin seeds
  17. 1 tsp Coriander seeds
  18. 1 tsp Fennel seeds
  19. ½ tsp whole black peppercorns
  20. ½” cassia stick
  21. 4 cloves
  22. 10 to 12 curry leaves
  23. ¼ bunch of fresh coriander leaves
  24. ½ tsp turmeric powder
  25. ½ tsp salt
  26. For the Gravy
  27. 3 tsp oil
  28. ½ tsp Mustard seeds
  29. ½ tsp fenugreek seeds
  30. 8 to 10 curry leaves
  31. 5- 6 shallots (small onions) julienned
  32. Extract taken from small ball of tamarind (approximately 3 tbsp)
  33. 1- 2 tsp grated jaggery
  34. ¼ tsp Salt
  35. To Serve
  36. Juice of ½ a lime
  37. Chopped coriander leaves

Instructions

  1. Wash the chicken lollipops and wipe dry.
  2. Mix all the ingredients of the marinade in a bowl and keep ready.
  3. Rub the chicken pieces well with it and set aside for some time.
  4. Next, to prepare the Andhra masala, heat oil in a pan, add the dried red chillies, ginger, garlic, cumin seeds, coriander seeds, fennel seeds, whole black peppercorns, cinnamon and cloves and saute for a few minutes.
  5. Next add curry leaves, coriander leaves, turmeric powder and salt.
  6. Mix well and cook for a few more minutes.
  7. Switch off the gas, allow it to cool and grind to a paste adding a few tsps of water.
  8. The Andhra masala is now ready.
  9. Next heat a non stick pan, add 1 or 2 tsp of oil and sear the chicken lollipops in high heat till they are universally golden brown in colour.
  10. Keep turning once in a while to facilitate uniform cooking.
  11. Transfer the lollipops to a plate and keep ready.
  12. To prepare the gravy, heat oil in a pan, add mustard seeds, fenugreek seeds, and curry leaves.
  13. Next add the shallots and cook till they turn light golden.
  14. Then add tamarind extract, jaggery and salt and mix well.
  15. Now add the Andhra masala paste, saute for a minute and add ½ cup of water.
  16. Bring it to a boil and add the chicken lollipops.
  17. Add little more water if necessary, close a lid and cook the chicken lollipops in low flame till cooked.
  18. This may take 5 to 10 minutes.
  19. Finish the dish by adding lime juice and coriander leaves and serve hot.
