Tiramisu with Flambéd Peaches

Ingredients to make Tiramisu with Flambéd Peaches

  • Peaches 9 (each cut into 8 slices)
  • Rum 1/4th cup
  • butter 2-3 Tbsp
  • sugar (for flambe) 4-5 Tbsp
  • Mascarpone Cheese 500g
  • eggs 5
  • sugar (for cream) 6 Tbsp
  • Mixed berry Fruit Juice - just enough to dip
  • Savoiardi Biscuits (Lady Fingers) 400g
  • Chopped White Chocolate 100g
  • Chopped Toasted Hazelnuts 5 Tbsp

How to make Tiramisu with Flambéd Peaches

  1. Flambe peaches: On low heat, melt butter. Sprinkle sugar. Once it starts to redden, throw in the peach slices. Cook peaches till they soften nicely on low-med heat. Turn them on their sides atleast once.
  2. Take pan away from stove. Add liquor and ignite. Let flambe, swirling the pan around lightly. Once the fire dies down, keep strained peaches aside and let cool.
  3. For Cream: Whip egg whites until firm. Whisk egg yolks with sugar until pale and creamy. Add Mascarpone cheese into egg-yolk mixture and stir well. Now fold whites into the cheese mixture.
  4. Assembly: Dip biscuits in fruit juice and line them up in serving dish or align them in individual parfait glasses. Use half the cream mixture to spread over the biscuit layer. Add a layer of peach slices.
  5. Now repeat with another layer of Savoiardi and cream and place the second layer of peaches decoratively. If doing parfaits, spoon 2-3 tbsp of cream in each glass, add peach slices and repeat.
  6. Now decorate with white chocolate and hazelnuts. Refrigerate this for atleast 4 hours or overnight. Serve chilled.

My Tip:

1) Do not dip the biscuits for too long lest they should break 2) Remember, the flavour of the juice you use will be caught by your palate, so choose the flavour wisely, if not using mixed berry.
