Ingredients to make Zuchini layered poached fish with beetroot caviar

  • Fish fillet-1 number
  • Zuchini -1 number
  • Beetroot juice -1cup
  • Boiled spinach -100gm
  • lemon juice-2 tablespoon
  • butter -30gm
  • salt 1 tablespoon
  • Black pepper 1 teaspoon
  • oil 1 cup
  • parsley - few sprig
  • Gelatin-1/2 teaspoon
  • nutmeg powder a pinch

How to make Zuchini layered poached fish with beetroot caviar

  1. Cut fillet of fish in 3 inches lengthwise and marinate it with melted butter,salt ,black pepper and nutmeg powder.
  2. Wrap it in a silver foil and poached in a hot water.
  3. Mean while in a saucepan take beetroot juice add gelatin and bring it to boil .
  4. Fill a glass with oil and place in refrigerator for about 1 hour
  5. In a bowl add lemon juice ,butter,salt and black pepper and mix well.
  6. In another frying pan add boiled spinach and saute it .Add pinch of salt and oregano.
  7. Make thin slices of zuchini and toss it in a frying pan.
  8. Take out the glass of oil from refrigerator.
  9. Fill a dropper with beetroot juice and put drop by drop in glass of oil with dropper.
  10. After 2 minutes still oil with spoon and take out the pearls.
  11. In a platter arrange saute spinach place poached fish over it arrange slice of zuchini on top of fish .
  12. Drizzle lemon butter sauce over it and also on side .
  13. Arrange beetroot pearls on sides and garnish with parsley and garlic bread.
