ABOUT Super Nachos with Cheese Sauce RECIPE

Top these crisp nachos with rich and creamy cheese sauce. I'am just obsessed with this Homemade Nacho Cheese Sauce! Apart from nachos, this creamy and delicious sauce goes well with panini sandwiches, french fries and your favorite vegetables. I followed the cheese sauce recipe from Joanne Ozug's blog. Trust me, this is the BEST sauce you'll ever have! I have made changes according to my taste, hence here we go for my version of Homemade cheese sauce. :)

Ingredients Serving: 4

  1. For Nachos:
  2. 2 cup corn meal flour
  3. 1/2 cup whole wheat flour
  4. Oil to deep fry
  5. For Cheese Sauce:
  6. 2 tbsp butter
  7. 2 tbsp flour
  8. 1 cup whole milk
  9. 1/4 tsp salt
  10. Pepper to taste (optional)
  11. 1/8 tsp cayenne pepper (red chili pepper)
  12. 8oz block (1 cup) sharp cheddar cheese grated
  13. Additional Toppings:
  14. Green bell pepper thinly sliced
  15. Tomatoes finely chopped

Instructions

  1. For Nachos:
  2. Mix the two flours and knead to a dough like for rotis.
  3. Roll out rotis and cook on both sides over high heat over a griddle pan and keep aside.
  4. Cut into desired sized pieces and deep fry till crisp and brown. Pop onto a kitchen paper towel. Keep aside.
  5. For Cheese Sauce:
  6. Melt the butter in a pan over medium flame. Once the butter is melted add the flour. Whisk until it combines into a smooth blond paste and starts to bubble around the edges.
  7. Add the milk to the pan and continue whisking. Once the milk is incorporated, raise the heat to high and bring to a boil. Once the milk has reached a boil, quickly lower the heat and reduce to a simmer. Allow the sauce to thicken slightly.
  8. Add the cayenne pepper, salt and pepper. Whisk to combine.
  9. Add the cheese and gently stir, allowing the cheese to melt. When the cheese is completely melted and the mixture smooth in consistency, the nacho cheese sauce is ready to serve. Top the sauce with capsicum and tomatoes.
  10. Enjoy immediately, as the sauce will get firm as it sits.
