Provenal Tomato Rice Soup

Ingredients to make Provenal Tomato Rice Soup

  • 1 cup white rice (semi cooked)
  • 2 tbsp olive oil
  • I medium size onion, chopped
  • 1 carrot, grated or chopped
  • 3 cloves garlic, pressed
  • I tsp orange zest
  • 1/2 tsp Dry thyme
  • 1/2 tsp fennel powder
  • 1/2 cup tomato puree
  • 2 Cups water
  • 2 tomatoes, chopped
  • 1 cup vegetable stock
  • salt as needed
  • 1 tsp sugar
  • 4-5 fresh basil leaves for garnish

How to make Provenal Tomato Rice Soup

  1. Heat oil in a pan and saute onions, carrot, garlic, orange zest, thyme and add fennel powder.
  2. Once the vegetables starts to soften, add tomato paste and water. Mix well till everything is incorporated well.
  3. Add in the chopped tomatoes now along with vegetable stock and season with salt, pepper and sugar.
  4. As it starts boiling add semi cooked white rice. Close the lid and simmer for around 12-15 mins until the rice is tender.
  5. Pour in the soup into bowls, add a swirl of fresh cream and garnish with fresh basil and crushed dry thyme.
