Ingredients to make Green Chutney made from Green Coriander Stalks

  • Big bunch green coriander stalks about 3-4 handfuls
  • A handful of coriander leaves
  • 2 -3 handfuls of mint leaves
  • 1/2 tbsp. sugar
  • 20 gms. Roasted peanuts
  • Juice if half lemon (optional)
  • 2-3 green chillies roughly chopped
  • 1 inch peice of ginger chopped into small cubes
  • 5-6 cloves of garlic roughly chopped
  • salt to taste

How to make Green Chutney made from Green Coriander Stalks

  1. Pluck as much tender stalk as you can take. Wash, clean and roughly chop green coriander stalks, coriander leaves, mint leaves and put it in a seive to drain excess moisture.
  2. Dry roast de peanuts till crisp and dry. Remove skin and keep aside.
  3. In a mixie jar add peanuts, ginger, garlic, sugar, salt and roughly chopped green chillies, coriander stalks, coriander leaves and mint leaves.
  4. Pulse in the mixer to a fine paste. Water is generally not needed but if difficult to grind you may add one - two tbsps. water.
  5. Lastly add de lime juice and pulse for a few seconds.

My Tip:

This chutney should be stored in a dry container in de fridge. Stays fresh for about 3-4 days. Great to make sandwiches, aloo chaat and can also be used as a marination for fish
