Ingredients Serving: 2

  1. Prawns 15-18
  2. 6 tbsp cornflour
  3. 4 tbsp all purpose flour
  4. 1/2 tsp crushed black pepper
  5. 1/4 tsp red chili powder
  6. 1/2 tsp garlic powder
  7. 1/4 tsp orange food colour ( optional)
  8. Salt to taste
  9. 1/2 cup chilled soda/ water
  10. Oil for frying
  11. 4 tbsp Garlic Mayo
  12. 3 tbsp Garlic Chili sauce
  13. 2 tbsp hot sauce
  14. 1/4 tsp red chili powder
  15. 1/2 tsp honey
  16. 1/4 tsp lemon juice
  17. 1 chopped spring onion for garnish

Instructions

  1. Wash and devein prawns and pay dry them with clean kitchen towel. Marinate prawns with red chili powder, crushed black pepper and salt for around 15 minutes.
  2. To make spicy mayo: Mix Mayo, Garlic chili sauce, hot sauce,red chili powder, honey and lemon juice and mix well, please taste it and adjust the taste according to your preference.
  3. In a bowl add corn flour,Four, salt, garlic powder, red chili powder, crushed black pepper and little food colour and mix well. Add chilled soda and make thick batter.
  4. In a wok heat oil for deep frying, when hot is hot enough, dip individual prawn in the the prepared batter and gently put in hot oil to fry. Do not over crowd the wok. Frying for 3 to 4 minutes or until prawns are cooked.
  5. Repeat the process until all the prawns are fried. Place the fried prawn on absorbent paper to absorb extra oil.
  6. Put all fried prawn in bowl of spicy mayo sauce and with help of two spoons gently toss them,until all are evenly coated with sauce.
  7. Place the Dynamite Prawns on serving dish on bed of shredded cabbage and lettuce and garnish with chopped spring onion.

It was absolutely amazing! Thanks for such a great idea! I shallow fried the prawns for a healthier version and cooked them with the sauce but the result was still perfect!
