Fish Batter Fry. Inspired by the English fish and chips. The cod replaced by our indigenous bhetki. Soul food for the gastronome Bengali.

Ingredients Serving: 8

  1. 8 sea bass or bhetki fillets (approximately 3"x 2" size)
  2. 3/4 cup plain flour
  3. 2 tbsps corn flour
  4. 1/2 tsp baking powder
  5. 1 tbsp yogurt whipped
  6. 2 tsps sunflower oil
  7. 1 egg white
  8. 2 tsps black pepper freshly grounded
  9. 2 tsps lemon juice
  10. 1 tsp Garlic paste
  11. Salt to taste
  12. Oil for Deep frying

Instructions

  1. Marinate the fish fillets with salt, lemon juice, garlic paste and black pepper powder, keep aside for 1 hour.
  2. In a bowl, add the flour, salt, corn flour and sodium bicarbonate, drizzle the oil and mix well. Add just enough water to it to form a thick batter.
  3. Now add the whipped yogurt and the egg white to the batter. Beat thoroughly. Allow to stand for 45 odd minutes.
  4. Heat the oil in a deep fry pan. Dip the fish fillets in the batter, carefully lower them into the hot oil and fry until golden-brown.
  5. Drain on absorbent kitchen towel. Serve hot.
