7 layered Rice Pancake ( Sat kappi Ghavne )

Ingredients to make 7 layered Rice Pancake ( Sat kappi Ghavne )

  • Rice flour 2 cups ( Note :- For this, washed and drained thick rice, dried in shadow and then grinded to rice flour is used. But as its quite time consuming, I use Malawani Ghavne flour or Modak flour. It is easily avaible in Malawani exhibitions or general stores.)
  • water
  • salt 1/2 tsp
  • Fresh coconut grated 2 cups
  • jaggery grated 1 1/2 cup
  • cardamon powder
  • oil as required

How to make 7 layered Rice Pancake ( Sat kappi Ghavne )

  1. Heat a heavy bottomed vessel. Add grated coconut and jaggery and mix well.
  2. keep stirring till jaggery melts
  3. keep this mixture aside.
  4. Mix rice flour, salt in a vessel. Add water and stir. Consistency should be similar to milk.
  5. Heat a nonstick dosa pan. Ensure that pan is hot and spread 2-3 drops of oil on it and place a half cup rice flour batter.
  6. Dont spread it, just pour it, It will automatically spread in round shape.
  7. You will notice holes on batter. Let it cook on medium to slow flame.
  8. When its cooked and edges start lifting, add topping of coconut-jaggery mix, on the half side.
  9. Fold to cover the mixture as shown below.
  10. Keeping the folded Ghawan in the pan, dizzle oil on empty half side and Place half cup batter on it.
  11. When this side is cooked spread coconut- jaggery mix, on it.
  12. Now flip the first part of Ghawan backward as shown below.
  13. Thus proceed till you get 7 parts of stuffing.
  14. Carefully take out the layered ghawan (pancake) on plate.
  15. Cut it into 2 parts with a help of knife and serve.

My Tip:

1) For ghawan its very necessary that pan should be hot. 2) Flipping this pancake back and forth is a delicate process. It gets trickier as the layers start increasing. But with a little practice, we can do it easily.
