ABOUT Parmesan Fish with Green Pesto RECIPE

Soft juicy pesto flavoured fish under crispy outer layer

Ingredients Serving: 4

  1. White fish fillet: 500g
  2. Green pesto: 1 cup
  3. Parmesan cheese: 1/3 cup
  4. Breadcrumb: ½ cup
  5. Flour: 2 tbsp
  6. Paprika: 1 tsp
  7. Egg: 2
  8. Salt to taste (cheese had enough salt for me so I skipped this)

Instructions

  1. Wash & clean fish and cut into rectangular pieces. Make sure there is no bone at all in fillets. Marinate the fillets in ½ cup pesto for 15 mins.
  2. Beat eggs lightly in a bowl and in a separate bowl mix parmesan cheese & breadcrumbs with rest of the ingredients.
  3. Now dip marinated fish fillets in the beaten egg and immediately roll in the breadcrumb mixture on both sides.
  4. Arrange the fillets in a greased nonstick baking pan. Preheat the oven at 180C and bake the fillets for 20 mins at same temperature or until fish is flaky and nicely done.
  5. Remove the pan from oven and serve immediately with extra pesto and sour cream. French fries or potato wedges complement this dish perfectly.
