Ingredients Serving: 4

  1. 1 cup gram flour
  2. 1 cup curd
  3. 1/4 teaspoon turmeric powder
  4. 1/2 tsp oil
  5. 3/4 teaspoon salt or acc to taste
  6. 3 finely chopped green chillies
  7. about 2 cups of water
  8. 1/2 teaspoon black mustard seeds
  9. bunch of finely chopped coriander leaves
  10. 1 grated coconut
  11. 4-5 curry leaves

Instructions

  1. Take a bowl and add curd into it.Beat the curd and add gram flour,water, salt and turmeric powder to it.Mix really well so that there are no lumps.
  2. Heat a heavy pan and add the mixture to it.Stir the mixture continously until it becomes thick on a medium flame.
  3. Now lower the flame but keep stirring the mixture for 8-10 mins(Switch off flame exactly after this time for best results).Take a large plate/tray and grease it with a little oil, spread the mixture very thinly onto it with a metal spatula.
  4. After it has cooled spread some grated coconut and coriander then cut it vertically into thin strips and roll it.Take a small pan and add oil, then curry leaves and mustard seeds into it and pour evenly over the khandvi.
  5. Garnish the khandvi with some more grated coconut and coriander leaves and serve.
