ABOUT Whole Wheat Nan Khatai RECIPE

Nan khatai are Indian shortbread cookies. Popular tea time snack of many of us. These whole wheat version ones also tastes equally good and are crumbly in texture too. Wholesome goodness of wheat makes them healthy as well.

Ingredients Serving: 6

  1. Whole wheat flour 125gm
  2. Gram flour or besan 2 tbsp
  3. Powdered sugar 70gm
  4. Baking powder 1/2 tsp
  5. Ghee or butter 70gm
  6. Cardamom powder 1/2 tsp
  7. Nutmeg powder 1/4th tsp
  8. Milk 2 to 4 tbsp
  9. Almonds few

Instructions

  1. In a bowl , add in the wheat flour , gram flour , powdered sugar , nutmeg and cardamom powders and baking powder together .
  2. Powdered sugar is best for biscuits , as it gets mixed in easily .
  3. Here's the trick :-
  4. For ghee users : Melt the ghee well on a low flame . Patiently deal with it or else it'll get burned . Once done , let it sit in the freezer for 15 mins or till it's set well . Using this set ghee , mould your dough . Make sure to cut it into smaller pieces . This step is crucial for crispy and crunchy cookies .
  5. For butter users : Cut the butter into small bite sized pieces and use it to mould your flour . Again , the butter should be cold enough too .
  6. Another step not to miss is that always , always work with the dough gently . Don't use force and pressure ; meaning don't do it like how you would deal with your roti dough . Those two can destroy your naan khatais .
  7. Preheat your oven to 180° at this point
  8. When done , gently , ever so carefully , fold in the milk as a final step .
  9. With your hands , mould a portion into a thick , kind of small circle because while baking , it spreads to become a larger one . That's why they should be thick and small .
  10. Gently push an almond into the centre , making a dent .
  11. Line these in a baking tray and bake for about 20 - 25 mins .
  12. Let it sit at room temperature for about 10 mins before serving .
