Ingredients to make One pot meal with red amaranth leaves and prawns

  • prawns 200h
  • rice 1 cup
  • Red amaranth 1 bunch, chopped
  • onion 1 large chopped
  • ginger 1 inch chopped
  • garlic 5-6 clove chopped
  • tomato 2 chopped
  • green chilly 4-5
  • cardamom 3
  • clove 5
  • cinnamon Stick 1
  • jeera 1 teaspoon
  • bay leaf 1
  • Desiccated coconut 2 tablespoon
  • coriander powder 1 tablespoon
  • Garam masala powder 1 teaspoon
  • Salt and sugar as per taste
  • oil as required

How to make One pot meal with red amaranth leaves and prawns

  1. Marinate the prawns with salt and turmeric for 10 minutes
  2. To a deep pot add oil, add the whole garam masala, jeera, bay leaf.
  3. Add chopped onion, then add ginger, garlic, green chilly and tomato.
  4. Saute for 5 minutes then add desiccated coconut and the chopped amaranth leaves.
  5. Once it starts to give out water add the rice, prawns, coriander powder, salt, garam masala powder and 2 cups water. Cover it and cook on low flame.
  6. After 10 minutes check if more water is required.
  7. Cook till the rice is done, may take around 15-20 minutes if the rice was soaked.
  8. Serve hot with raita.

My Tip:

Add water accordingly. Any vegetables can be added.
