ABOUT Aloo Matar Paratha RECIPE

This is one of my mom's recipes and is an absolute delish, follow this recipe to make some delicious stuffed parathas at home.

Ingredients Serving: 4

  1. For stuffing
  2. Potatoes 1 (Boiled and Mashed)
  3. Peas 1 cup
  4. Jeera 1tsp
  5. Amchur powder 1 tsp
  6. Green chillies 2
  7. Coriander 2 tbsp Finely chopped
  8. Garam masala 1/2 tsp
  9. Ginger garlic paste 1 tsp
  10. Salt to taste
  11. oil 2 tbsp
  12. For paratha dough
  13. Wheat flour 2 cups
  14. Ghee 1 tsp
  15. Salt 3 pinches

Instructions

  1. Boil/Pressure cook potatoes and peas with little salt separately.
  2. Mash the boiled potatoes and peas keep aside. In a kadai,add little oil,add jeera, chillies, ginger garlic paste and mix well.
  3. Once the gingergarlic is fried well,Add the archur powder and mix well. Add the mashed mixture and cook well for 5 mins on low heat. We need the peas and potato nicely blended and soft, add more salt if required. Mix well
  4. Now cook the mixture covered for 2 mins on medium heat. Keep stirring to avoid burning. Add garam masala and cook for another min.garnish with corainder leaves
  5. Remove from heat and let the mixture cool completely. You may check for salt and adjust if required
  6. Dough for parathas
  7. Take wheat flour in a bowl, add salt and using water knead the dough well to a normal roti dough consistency
  8. Make small rounds of the dough. Roll our one portion half way and place one spoonful of the stuffing in the centre. Bring all the edges to the centre and lock the stuffing inside.
  9. Roll out softly do not press while rolling or the stuffing may come out.Optionally you can use fresh banana leaves for rolling them.Transfer the paratha on a tava.
  10. Cook the paratha on a tawa, drizzle oil once on both sides while cooking. Cook each paratha for about 2 mins, 1 min on each side or till golden brown
