Vegetable Rice Cutlet

Ingredients to make Vegetable Rice Cutlet

  • rice – 2 cups, cooked, mashed
  • onion - 1 big size finely chopped
  • Mixed Vegetables carrots,Beetroot – 1 cup finely grated
  • coriander Leaves – 1 tblsp, finely chopped
  • jeera – 1 tsp
  • ginger Garlic Paste – 2 tsp
  • peanuts – 2 to 3 tblsp,roasted and crushed
  • Garam masala Powder – 1 tsp
  • Breadcrumbs – 1 cup
  • Corn flour – 2 tblsp
  • red chilli Powder – 2 tblsp
  • maida-1/4cup
  • salt as required
  • oil as required
  • Optionally Mint Leaves/potatoes/peas can be added

How to make Vegetable Rice Cutlet

  1. Heat 2 tblsp oil in a pan over medium flame and jeera.
  2. Add the onions and ginger garlic paste and mixed vegetables.Sprinkle a little salt and saute for 3 to 4 minutes.
  3. Add the crushed peanuts,garam masala powder, red chilli powder and stir well.Add coriander leaves and mix well and remove from flame
  4. Add the rice and mix again.
  5. Mix the cornflour and maida with enough water to thick paste.
  6. Shape them into cutlets.Gently roll them in the breadcrumbs and keep aside.Dip the cutlets in this mixture
  7. Heat oil in a frying pan over medium flame and drop the cutlets in it for frying.
  8. Deep fry the cutlets, one or two at a time, until golden brown.
  9. Remove and serve with tomato ketchup.

My Tip:

Tomato and Mint chutney both are suitable.Left over rice can be used at its best for a delicious evening snack
