Vegetable hot and sour Soup

Ingredients to make Vegetable hot and sour Soup

  • cabbage shredded - ĵ cup
  • Bean sprouts - 1/4 cup
  • Button mushrooms chopped - 2
  • Green capsicum chopped - 1/2 medium
  • carrot grated - 1/2 medium
  • French beans chopped 4 - 6
  • cauliflower grated - 1/2 cup
  • onion - 1 chopped
  • garlic 2-3 pods chopped
  • ginger grated - 1 inch piece
  • Dark soy sauce - 2 tablespoons
  • Green chilli sauce - 2 tablespoons
  • Vegetable stock 4 - 5 cups
  • salt to taste
  • sugar - ½ teaspoon
  • White pepper powder - 1/2 teaspoon
  • cornflour/corn starch - 3 teaspoons
  • vinegar 1 tablespoon
  • Spring onion greens finely chopped 1 stalk
  • oil - 1 tablespoon

How to make Vegetable hot and sour Soup

  1. Heat oil in a deep pan. Add onion, garlic and ginger and sauté for a minute.
  2. Add French beans, carrot, bean sprouts, cabbage, cauliflower & capsicum, mix well.
  3. Add mushrooms and continue to sauté. Add dark soy sauce, green chilli sauce and vegetable stock.
  4. Add salt, sugar and mix. Add white pepper powder and mix. Add cornflour mixed in a little water and cook till the soup thickens slightly.
  5. Add vinegar and stir. Pour into individual soup bowls. Garnish with spring onions.
