THAI VEGETARIAN PINEAPPLE FRIED RICE

Ingredients to make THAI VEGETARIAN PINEAPPLE FRIED RICE

  • 3 cups cooked white rice
  • 2 tbsp cooking oil
  • 1 tsp grated garlic
  • 1 chopped red chili
  • 2 shallots, finely chopped
  • 1\2 cup frozen corn
  • 1 small carrot diced
  • 1 tomato diced
  • 1 cup fresh pineapple
  • 1 cup roasted cashew
  • 3 strings of spring onion
  • 1 tbsp sesame oil
  • 2 tbsp Soy sauce
  • 1.5 tsp curry powder
  • Juice of 1 Lime

How to make THAI VEGETARIAN PINEAPPLE FRIED RICE

  1. Heat oil in a pan. fry cashew. add garlic and red chili.
  2. Add onion, cook till translucent. stir in carrot, corn and tomato till tender.
  3. Add sesame oil, soy sauce, curry powder and lime juice.
  4. Add pineapple chunks, cashew, spring onion and rice. toss everything well and cook for 2 minutes.
  5. Serve immediately.

My Tip:

Substitute sesame oil with fish sauce if non-vegetarian. Feel free to use brown rice in this recipe.
