ABOUT Brown Rice Shrimp Jambalaya RECIPE

Jambalaya is dish of Louisiana, New orleans origin of Spanish and French influence. It consists of meat , vegetable and seafood mixed with rice.

Ingredients Serving: 3

  1. 1 tbsp olive oil
  2. 2 cups finely chopped yellow onion
  3. 3/4 cup chopped bell peppers(red, green, yellow)
  4. 4 garlic cloves minced
  5. 2 tsp dried parsley
  6. 1/2 tsp dried thyme
  7. 1/2 tsp black pepper powder
  8. 1 tsp red cayenne pepper
  9. 1 1/2 cup diced campari tomatoes
  10. 4 cups Chicken broth
  11. 1 1/2 cup long grain brown rice
  12. 1 1/2 lbs medium shrimp
  13. 4 scallions for garnishing
  14. Salt for seasoning

Instructions

  1. In a big pan or wok heat olive oil. Add chopped onions until translucent. Add minced garlic, cook a little bit then add chopped bell peppers until tender.
  2. Add diced campari tomatoes, cayenne pepper,black pepper powder,salt,thyme and parsley. cook about 4 to 5 minutes.
  3. Mix the brown rice and fry a little bit then add chicken stock in it. Bring to a boil then simmer the flame and cover cook for about 45 - 50 minutes until rice is tender and most of the liquid has been absorbed.
  4. Mix the shrimp and cover cook until the shrimp are cooked.
  5. Place the jambalaya into serving dish and garnish with sliced scallions.
