ABOUT Stuffed Karela RECIPE

The delicious and low fat stuffed bitter gourds (karela) recipe is going to appeal to all. The spicy onion masala stuffing in the slit karelas or bitter gourd works wonders and is best enjoyed with paranthas.

Ingredients Serving: 4

  1. 4 bitter gourds
  2. 1 large sized onion, finely chopped
  3. 1 Green Chilli, finely chopped
  4. 1/2 piece of ginger (adrak), finely chopped
  5. 2 cloves of garlic (lehsun), finely chopped
  6. 1 tbsp chopped coriander (dhania)
  7. 3 tbsp oil
  8. 2 tsp besan (Bengal gram flour)
  9. 1/2 tsp chilli powder
  10. 4 tsp salt or to taste
  11. 1 tsp coriander (dhania) powder
  12. 1/4 tsp turmeric powder (haldi)
  13. 1/2 tsp dried mango powder (amchur)
  14. 1/8 tsp cumin seeds (jeera)
  15. 1 teaspoon of lemon juice
  16. A pinch asafoetida (hing)

Instructions

  1. Wash bitter gourd thoroughly with water. Remove skin of all the pieces by scraping with a vegetable scraper
  2. Keep the skin aside and add salt to it.Slit the bitter gourds length wise. Remove the seeds and discard them if they are very hard, otherwise mix them with the skin scrapes.
  3. Take 1 tsp salt and apply it thoroughly to all the bitter gourd. Keep aside for about 1 hour.
  4. Add oil in the pan when the oil becomes hot, add cumin seeds and Asafoetida. when the seeds becomes dark, add onion, green chili, ginger and garlic. cook for 2-3 minutes and add all the spices along with besan.
  5. stir well and cook until the mixture turns light brown, about 5-7 minutes.
  6. Take the bitter gourd skin in a sieve and wash thoroughly with water. add it to the above mixture and stir.
  7. Fill the mixture in each bitter gourd.Heat a non sticking frying pan and spray oil. Place all the bitter gourds in the pan, cover with a lid and reduce the stove to low. Let them cook for 5-7 minutes.Turn the bitter gourds over and again cover the pan
  8. The stuffed bitter gourds are ready to be served either with Roti or Rice.
