Phirni is a creamy rice based dessert from Northern India. I am going to share recipe of Apricot Phirni

Ingredients Serving: 2

  1. 2 tbsp soaked rice /rice flour
  2. 2 cups/250 ml milk
  3. 1 pinch saffron
  4. ⅓ cup sugar
  5. ½ tsp green cardamom powder
  6. 2 tbsp dried apricots chopped to small pieces

Instructions

  1. Drain soaked rice and grind it to a coarse paste. Heat milk to boil, add rice paste or rice flour( if using rice flour dissolved in a little milk) while stirring constantly.
  2. Add chopped apricot, sugar and saffron and mix well. Cook till sugar dissolved completely. Add cardamom powder and garnish with chopped apricots.
  3. Chill in freezer for hours or two before serving.
