Ingredients Serving: 4

  1. Soaked rice basmati 400 gm
  2. Desi ghee 5 to 6 tbsp
  3. Onion big 4
  4. Choped carrot 2
  5. Chopped beans 1 cup
  6. Chopped cauliflower 1
  7. Peeled green peas 1 cup
  8. Chopped mint leaves 1/2 cup
  9. Baby potaoes 10
  10. Ginger Garlic paste 2 tbsp
  11. Red chilli pow.1 tsp
  12. Salt to taste
  13. Black cardmom 4
  14. Green cardmom 6
  15. Cloves 8
  16. Black pepper 10
  17. Tezpatta 2
  18. Javitri crushed 1 tbsp
  19. Cinnamon crushed 1 tbsp
  20. SHAh jira 1 tsp
  21. Jira 1 tbsp
  22. Kewra or rose water 1 tbsp
  23. Orange food clr 1 tsp (mix in 1 tsp water)
  24. Wheat flour dough 1/2 cup
  25. Water 8 glass

Instructions

  1. Cut the onion into long and thin pieces
  2. Deep fry it in batches till golden brown
  3. Keep aside
  4. Heat 2 tbsp ghee in a pan
  5. Add half qty of all whole spices . Accept tezpattA.
  6. Splutter the spices
  7. Add salt ginger garlic paste .
  8. Fry til it leave oil .
  9. Add red chilli powder,chopped veggies.
  10. Cook till almost tender.
  11. Keep aside.
  12. Now boil 8 glass of water in a pan
  13. Make a potli of all remaining whole spices.
  14. Add tezpatta ,potli of spices and 1 tbsp ghee in water .
  15. Boil 15 to 20 mnts.
  16. Until spices leaves flavour
  17. Add soaked and strained rice.
  18. Boil half cooked.
  19. Strained and keep aside .
  20. Now take a broad ,heavy bottomed pan.
  21. Add 2 tbsp ghee. Heat the ghee.
  22. Add 1/4 part of boiled rice and spread in the pan.
  23. Spread the 1/4 part fried onion on the to of rice.
  24. Spread 1/4 part fried veggies on the top of onion .
  25. Add mint leaves and spread.
  26. Repeat these process again Nd and again .
  27. At last sprinkle colour,kewra or rose water.
  28. Sprinkle 1 tbsp ghee .
  29. Cover the pan and seal edges with dough.
  30. Keep on a tava and dum on low heat .
  31. Until steam leaves escape.
  32. Remove from heat.
  33. Serve with Raita.
