Ingredients to make Bhapa pitha( steamed rice cake)

  • 2 cups rice flour.
  • 1 1/2 cups fresh coconut (or desiccated coconut,unsweetened)
  • 1/2 cup water plus more for steaming
  • 1 1/2 cups sugar

How to make Bhapa pitha( steamed rice cake)

  1. To prepare pitha sift flour and add sugar. Add 1/2 cup coconut
  2. Sprinkle small amounts of water at a time on the flour mixture to dampen the flour. The flour mixture should neither be like dough nor like batter but just wet. Set aside for at least 30 minutes.
  3. If using desiccated coconut, add milk and dampen the coconut. Set aside.
  4. Take water in a separate bowl and soak the muslin cloth pieces. Set aside.
  5. Sift the damp flour again through a stainer. You may have to sieve the wet flour through the stainer with the help of your hands.
  6. Boil some water in the pitha making pan by covering the pan wid a lid. Proceed to pitha making steps as vapour appears through the holes.
  7. To make a steam pitha, spread flour mixture in the small bowl lightly in a way that only half the bowl is covered. This depends on the size of the bowl
  8. Place some coconut and sugar at the center of the bowl.
  9. Cover the coconut and sugar by spreading more damp flour.
  10. Take one of the muslin from water, squeeze out water and spread the wet cloth on the bowl of flour.
  11. Gather the corners of the cloth with bowl inside and carefully flip the bowl with the help of the cloth on the holes of the pitha making pan. The bowl should now be upside down on the holes of the pan.
  12. Carefully take out the bowl, gather the corners on top of the flour mixture. The piece of cloth will hold the bowl shaped pitha.
  13. Steam cook for 6-8 minutes
  14. Carefully unwrap the pitha from the cloth and place in a plate with the help of a spatula or spoon.
  15. Add the cloth back to water bowl to soak.
  16. Using the second piece of cloth repeat the steps for next pitha. Soak the cloth in water when done.
  17. Rinse squeeze water of the last cloth piece and use for the next pitha after.

My Tip:

Use home made rice flour (soak the rice (any variety) for 4-5 hours then wash it and then spread on a plate.Keep aside and then grind to a powder in a dry grinder. Instead of sugar you can substitute jaggery.
