ABOUT #Chawal ki kachri RECIPE

Legendary rice recipe inherited from our foremothers. Rice is cooked, sundried and stored well in dry place to relish deep fried as and when wished to. Usually taken as tea time snack and also as accompaniment in lunch. Chawal Ki Kachri is a sundried rice snack which is prepared with rice flour or soaked rice. It is a popular snack among Sindhi people like potato chips.

Ingredients Serving: 5

  1. Broken rice 1 glass
  2. Water 6 glass
  3. Cumin Seeds 1 tesp
  4. Salt 2 tesp
  5. Asafoetida a generous pinch

Instructions

  1. Wash and soak rice for half an hour. Actually any variety of rice can be used.
  2. Pressure cook soaked rice with 6 glass of water till one whistle and then on sim for 5 minutes.
  3. Let the pressure drop down.
  4. Open the lid and whisk rice batter tightly with a ladle to mash rice.
  5. Let them cool down a little say 15 to 20 minutes. This batter should not be cooled completely as it would not pipe out then.
  6. Spread a large plastic sheet under bright sun.
  7. Fill the batter in a piping bag. Make an opening of 1/2 to 3/4 centimeters.
  8. Pipe out batter in desired shape on plastic sheet. I made them spiral like jalebis.
  9. Sun dry these for 4 to 5 days till completely dry.
  10. After 2 day drying detach them from plastic sheet.
  11. When completely dried store well in a dry place.
  12. Whenever wished just deepfry and relish.
  13. These kachri stay good for long if stored well , away from moisture.
