Ingredients Serving: 2

  1. Paneer tikka : yogurt 1 cup
  2. Paneer tikka : Paneer 250gm
  3. Paneer tikka : green chili 1 no. (finely chopped)
  4. Paneer tikka : Ginger (grated) 1/2 tsp
  5. Paneer tikka : Red chili powder 1/2 tsp
  6. Paneer tikka : turmeric powder 1/4 tsp
  7. Paneer tikka : coriander powder 1/2 tsp
  8. Paneer tikka : garam masala 1/2 tsp
  9. Paneer tikka : salt as needed
  10. Paneer tikka : oil for greasing
  11. Cooked rice : basmati rice 1 cup
  12. Cooked rice : Oil 1 tbsp
  13. Cooked rice : Cumin seed 1/4 tsp
  14. Cooked rice : Cloves 2 no.
  15. Cooked rice : Cardamom 2 no.
  16. Cooked rice : Cinamon stick 1/2 inch
  17. Cooked rice : Bayleaf 1 no.
  18. Cooked rice : Salt as needed

Instructions

  1. Cut paneer into cubes of 1 inch size and keep aside. Wash the basmati rice and soak in the water for 30 minutes.
  2. Take yogurt in a mixing bowl and beat well till smooth.
  3. Then add coriander powder, red chili powder, turmeric powder, cumin powder, garam masala, grated ginger, finely chopped green chilies and salt. Mix very well.
  4. Now add paneer cubes to this mixture and gently mix so that the paneer cubes are evenly coated with the marination. Cover and keep aside for about 30-45 minutes
  5. Meanwhile heat 1 tbsp oil in a deep pan or wok.
  6. Add cumin seeds, cloves, bayleaf and cinnamon stick. Sauté on a medium flame for a few seconds.
  7. When the cumin seeds crackle, add the soaked rice and sauté on a medium flame for 2 minutes.
  8. Add 3 cups of water along with salt, cover with a lid and cook on a slow flame for 10-15 minutes or till the rice is cooked, while stirring occasionally.
  9. Switch off the flame, spread the cooked rice in a plate and allow the grains to cool completely.
  10. Now heat a grill pan by applying a little oil. Put the marinated paneer (only put the coated paneer cubes, keep aside rest of the marination) and cook on low-medium flame.
  11. Evenly brown all the side by turning the paneer cubes occasionally. Once the paneer cooked completely and evenly browned, switch off the flame.
  12. Next heat 1/2 tsp oil in a frying pan. Pour the left over marination and cook by stirring continuously.
  13. Then add boiled rice and mix gently, otherwise the rice grain may break.
  14. Add in paneer tikka cubes and gently toss to combine well.
  15. Cook on a medium flame for 1-2 minutes tossing occasionally.
  16. Serve this paneer tikka fried rice hot with any side dish and enjoy !
