How to make Mah ki Dal / Punjabi Kali Dal

  1. Pressure cooker the dal in 1 litre water for 2 whistles
  2. Throw away the water and rinse the dal properly in water
  3. Put the dal back in pressure cooker and add about 1-1.5 " water -- up from bottom of pressure cooker.
  4. To this add tomato purée , Badi elaichi, adrak , Garam masala ,mirch powder , salt to taste and yogurt
  5. Also add Tadka to the above -- make this tadka separately in a frying pan with ghee , adrak and kasoori methi. Add in pressure cooker
  6. When all have been added , cook on medium fire for 10 whistles
  7. On opening the cooker , mash the dal with a spoon so that the consistency is creamy and smooth
  8. Garnish with fresh dhania patta ( coriander leaves ). Add a blob of white or yellow butter ( optional )

My Tip:

The consistency of dal is upto you. If you want to make it thinner , add water while it is simmering over the gas. Do not cover with lid at this point.
